In the South of France, fennel is a staple, especially for seasoning fish dishes. I have such vivid memories of driving through the countryside with my grandma when suddenly, she would scream, "Stop! I see some fennel!" We would pull over, and she’d hop out of the car, excitedly picking fresh wild fennel to cook with later. Those moments taught me that the best ingredients are often the ones growing naturally around us. 🌾✨

Ingredients:
1 cup fresh or frozen pineapple 🍍
1/2 small banana 🍌
½ teaspoon turmeric powder ✨
1-inch piece of fresh ginger, grated (adjust to taste) 🌱 🌱
½ teaspoon fennel seeds (or 1/4 cup fresh fennel bulb, chopped) 🌾
1 tablespoon chia seeds
1/4cup fresh mint leaves 🌿
1 cup water or coconut water
Ice cubes (optional)
How to make it:
Separating the smoothie preparation into two distinct blends serves to optimize both the nutritional value and sensory experience of the drink. By initially blending the coconut water with mint, fennel, and ginger, then straining the mixture, we remove the fibrous components of mint and fennel, resulting in a smoother texture and more refined flavor.
This step also preserves the integrity of the pineapple's fiber and the banana's creaminess, which are retained in the second blend with pineapple, banana, and chia seeds. Combining these two blends ensures a harmonious consistency and a delightful taste, enhancing the overall enjoyment of the smoothie.
Moreover, incorporating pineapple and chia seeds contributes to digestive health; pineapple contains bromelain, an enzyme that aids digestion, while chia seeds are rich in fiber, promoting regular bowel movements. This thoughtful preparation method ensures a nutritious and enjoyable beverage.
Set Your Intention:
Before you begin, take a deep breath and set a positive intention for your health: "My body is balanced, light, and energized. I nourish myself with love."
Prepare the Herbal Infusion:
In your Blender ( I used Ninja Blast Max Portable Blender), combine ½ cup of coconut water, fresh mint leaves, chopped fennel bulb, and grated ginger.
Blend on high until the mixture is smooth.
Strain the blended mixture using a fine-mesh strainer or cheesecloth into a bowl, pressing to extract as much liquid as possible. Discard the pulp.
Blend the Fruits and Seeds:
Rinse the blender jar to remove any residual pulp.
Pour the strained herbal infusion back into the blender.
Add the pineapple chunks, banana, chia seeds, turmeric powder, remaining ½ cup of coconut water, and ice cubes if desired.
Blend until the mixture reaches a smooth and creamy consistency.
Serve:
