Ingredients:
1/3 cup blueberries
1/2 banana
2 1/2 cups milk (or plant-based alternative)
1/2 teaspoon vanilla extract or half a vanilla bean
1/2 teaspoon nutmeg
4 prunes, pitted
1/4 cup strongly brewed lavender tea, cooled
3 tablespoons cornstarch
1 tablespoon butter
1 egg yolk (optional, for added richness and thickness)
3 tablespoons monk fruit sweetener or 1/3 cup granulated sugar
How :
Blend Fruit and Tea: In a blender, combine blueberries, banana, prunes, lavender tea, and 1 cup of milk. Blend until smooth.
Prepare Pudding Base: In a medium saucepan, whisk together sugar (or monk fruit sweetener), cornstarch, and a pinch of salt. Gradually whisk in the remaining 1 1/2 cups of milk until smooth. If using the egg yolk, whisk it in now for added richness.
Cook the Mixture: Place the saucepan over medium-low heat. Stir in the blended fruit mixture and nutmeg. Cook, whisking constantly, until the mixture thickens and comes to a gentle boil, about 7-8 minutes. Continue cooking for an additional 1-2 minutes to ensure the cornstarch is fully cooked.
Finish the Pudding: Remove the saucepan from heat. Stir in the butter and vanilla extract (or scraped vanilla bean seeds) until the butter melts and the mixture is smooth.
Strain (Optional): For an extra smooth texture, pour the pudding through a fine-mesh strainer into a bowl to remove any lumps or blueberry skins.
Chill: Transfer the pudding into individual serving dishes or a large bowl. Let it cool to lukewarm, then cover with plastic wrap, pressing it directly onto the surface of the pudding to prevent a skin from forming. Refrigerate for several hours until chilled
